Midweek family meals are one of my favourite things. Except for actually planning, preparing, cooking and clearing up. But actually sitting down with my boys for a meal together is just bliss.
One of our favourites is a veggie chilli as we put everything out on the table (tortilla wraps, cheese, chilli, rice, salad, nachos) and everyone just helps themselves.
I fancied doing this type of meal but though a variation of fajitas might be worth a try. I kept it low FODMAP for myself my not having tortilla wraps, but served it with brown rice, salad and nachos, which are simply tortilla chips with grated cheese, baked in the oven until melted.
This was what I used...
* garlic infused olive oil
* Quorn Steak Strips (gluten free)
* handful chopped spinach (frozen is fine)
* 1 can chopped tomatoes
* 1 tsp chilli powder
* 1 tsp mixed herbs
What I did...
1. Heat the oil in a large pan.
2. Add the steak strips and fry until they begin to brown.
3. Add the spinach and stir through.
4. Add the chopped tomatoes and sprinkle chilli powder and herbs on top before stirring through. Add more chilli powder if desired.
5. Simmer for about 5-10 minutes until sauce starts to thicken.
Serve with rice, nachos and gluten free tortilla wraps depending on how you feel!
