As a mother of three (including a 5 year old and an 8 year old with Aspergers) I regularly end up cooking variations on the same meal in the attempt to get everyone to eat (and ideally eat at the same time and roughly the same meal - I live in hope that this will one day happen.)
Trying to fit my own low FODMAP diet around family life is challenging, and I'm trying to find ways of making things easier for myself. One trick is to cook twice as much gluten free pasta when ever I cook it, and freeze a portion. This means that whenever I have an "I can't be bothered to cook for myself..." moment, I can always resort to pasta with melted Cheddar cheese, done in the microwave if necessary.
One day when I had a little more enthusiasm for cooking for myself (though it is possible it was due to the face that I'd had cheesy pasta the night before) I threw in a few more things to make my meal a bit more exciting.
This is what I used...
* Garlic infused olive oil
* Cooked gluten free pasta
* Passata
* Cheddar Cheese, grated
* Spinach
* more Cheddar Cheese, grated
Method...
1. Warm the cooked gluten free pasta in a saucepan with a bit of garlic infused oil
2. Stir in a dollop of passata
3. Add a small amount of grated cheddar cheese and stir as it melts into the sauce.
4. Next add some spinach leaves and stir until wilted.
5. Transfer to an ovenproof dish, top with more grated Cheddar and grill until the cheese is melted.
