A recent (joyful!) discovery for this mostly-vegetarian IBS sufferer, was that there are actually quite a few Quorn products which are gluten free. I knew that Quorn Mince was ok and had presumed everything else would be off limits, but no! If you look closely at the packets quite a few are Gluten Free.
One of my discoveries was the Quorn Steak Strips which lend themselves so well to stir-fry type meals (which you can serve with rice - boom!)
I created this dish using...
* Quorn Steak Strips
* garlic infused oil
* carrots
* broccoli (ok in small amounts)
* soy sauce
* passata
* peanut butter
* long grain rice
Method...
1. Heat the oil in a frying pan.
2. Fry the Quorn Steak Strips until they are warmed through.
3. Stir in carrots (cut into think strips) and broccoli (cut into small florets)
4. Cook for a few minutes until vegetables begin to soften.
5. Add soy sauce and passata to taste (how much you add depends how saucy or salty you like it!)
6. Finally stir in a blob of peanut butter until it has melted to create a satay style sauce.
7. Serve with cooked rice.
